How to Make Muffin Cakes

Muffin cakes are soft and delicious, perfect for breakfast or afternoon tea. Here’s a simple guide to making them.

Ingredients

  • 200g all-purpose flour
  • 100g granulated sugar
  • 120ml milk
  • 1 egg
  • 80g butter (melted)
  • 1.5 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Prepare the Oven and Muffin Tin
    Preheat the oven to 180°C (350°F). Line a 12-cup muffin tin with paper liners.

  2. Mix the Dry Ingredients
    Combine the flour, baking powder, salt, and sugar in a bowl. Sift the mixture to ensure no lumps.

  3. Mix the Wet Ingredients
    In a separate bowl, beat the egg and then add the milk, melted butter, and vanilla extract. Stir until well combined.

  4. Combine Wet and Dry Ingredients
    Pour the wet mixture into the dry ingredients. Gently fold the ingredients together using a spatula until just combined. Be careful not to overmix, as it may affect the fluffiness of the muffins.

  5. Fill the Muffin Tin
    Spoon the batter into the muffin cups, filling each about 2/3 full. Gently tap the tin on the counter to level the batter.

  6. Bake
    Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.

  7. Cool and Serve
    Remove the muffins from the oven and let them cool for a few minutes. Serve warm or at room temperature. Enjoy!

  • Feel free to add chocolate chips, blueberries, or nuts for extra flavor and texture.
  • To make the muffins even fluffier, slightly warm the butter and milk before mixing to ensure the batter temperature is ideal.
